ou Cheng Fishball Noodles is hands down one of my favorite spots in Singapore to satisfy that craving for a comforting bowl of meepok. Here, they’ve perfected the balance between textures and flavors. The meepok is wonderfully q, with that ideal chewy bounce that Singaporeans love. The flavor base here is spot-on—a blend of soy sauce, fragrant lard, a touch of vinegar, and just the right amount of heat to elevate the dish. It’s slightly sweet, with an extra spicy kick that’s perfect for those who enjoy their noodles with a bit of zing.
One thing to note is that You Cheng serves their noodles with beansprouts—something you won’t find at every stall. If you’re like me and prefer your bowl without them, just mention it when ordering. The experience is further enhanced with self-serve chili padi, spring onions, and crispy pork lard, allowing you to tweak your bowl to your liking. Personally, I love soaking the pork lard in either the gravy base or the soup for just a second or two—it keeps the lard slightly crispy while infusing it with extra flavor.
The true star of this place, though, is the soup. As you wait in line, you’ll see the stall’s pot at a constant rolling boil, with bits of animal essence bubbling to the surface. When the aunty serves up your mixed and folded noodles, she ladles out a bowl of their super-rich, deeply flavorful stock. The soup is carefully strained to remove any remaining bits, leaving a smooth, concentrated broth that’s intensely satisfying.
Their fishballs are smaller than the standard size, seemingly handmade, with a perfect bite and bounce—soft yet firm. The bowl also includes minced meat pieces, slices of fishcake, and a fish dumpling with a silky outer texture that adds a delightful contrast to the bowl.
